Here is the recipe for the rice and chicken I brought into class today. I would have printed it and brought it into class but the printer isn't working.
Spanish Rice and Chicken Things You'll Need: • Boneless/Skinless Chicken Breasts, thawed • 1 12 Ounce jar of salsa, mild or hot depends on you • Chili Powder • 1 can of corn • 2 cups of rice • table salt (if wanted) • lemon pepper (if wanted) • black pepper (if wanted)
1. Preheat your oven to 350 degrees. Place as many boneless/skinless chicken breasts in a baking dish as you need or that will fit into your dish. Place chicken in oven and let cook for 30 minutes. 2. In a pot on the stove, bring 4 cups of water to a boil. Add 2 cups of rice and let boil. Let it simmer, covered, for 20 minutes. Let stand for 5 minutes. Pour in your jar of salsa, and also add the corn (i also added just a little bit of butter)at this time. Place back on low heat and stir regularly. Leave on heat just long enough to heat up the salsa and corn (around 5-10 minutes) 3. Remove chicken from oven; check that the chicken is cooked thoroughly. Sprinkle chili powder over chicken. Use as much or little as you desire (salt, pepper and lemon pepper is also what I used). Place chicken back in oven for around 10 - 15 minutes.
